God Spelled Backwards

This recipe was something that we prepared for the pups all the time. We used turkey breast, but have used chicken this time. You can use either or. The puppies absolutely loved this special dish!


Ingredients

Whole Chicken breasts, bone-in, skin-on, (unsplit)

12-16 oz bacon, keep about 7-8 slices whole, and cut the remaining bacon into 1-2 inch pieces

1 pound baby carrots

2 honeycrisp apples, cored, and medium diced

olive oil


Instructions

Preheat oven to 375F.

On a sheet pan, add the carrots and apples; drizzle with olive oil, mix, making sure that all of the carrots and apples are lightly coated with oil. Add the chopped bacon; spread them evenly on the sheet pan.

Wrap the chicken in bacon, one slice at a time and letting the bacon slightly overlap the previous slice you put on the chicken. Start from one end and work your way down to the other end of the chicken. You can tuck the ends of the bacon slices underneath the chicken.


Set the bacon wrapped chicken on top of the carrot and apple mixture in the middle of the sheet pan. You can either put an oven save thermometer into your chicken now (the thickest part) and set it for 165F to automatically let you know when it is done, or check it when you think it is done. I prefer putting the thermometer in, so I can walk away and take care of other things. This could take 35-40 minutes, depending on the size of the chicken.

Once the chicken is done, the carrots and apples should also be roasted.

Allow the chicken to rest at least 10-15 minutes so it can retain its juices and stay nice and moist.


Cut up the chicken (accordingly to the size of your dog) and chop or mash the carrots and apples (depending if your dog has teeth or not). Chop up the bacon accordingly as well, or if you feel it is too fatty for your dog, you can omit that, but they will have the flavor of the bacon on the rest of the food.

Note: Depending on your preference, you can either wrap the bacon around your chicken or just chop up large pieces and toss with the carrots and apples.
